British cheese made entirely on the farm is unlikely ever to satisfy consumer appetite for “cheese made with integrity”. Go to Wales, Yorkshire, Lancashire and many other parts of Britain and you will find many brilliant farm cheeses. But there are plenty of really good cheese shops and delis selling British cheeses, and farmers’ markets are selling them up and down the land.
